In her village above Salins, Martine Cêtre is resurrecting a practice that farmers should never have abandoned: the short circuit, direct sales from producer to consumer. Her tome du Poupet (the name of the local mountain) is a hit. A caregiver until 2014, she took over her husband's dairy farm when he was unable to work. After training, she turned to manufacturing. Thus was born her uncooled raw milk tome, a discreet variant in Franche-Comté. It is matured for 6 to 8 weeks and weighs about 1.6 kg. A real treat!
