Read moreIf the word "raw" has a meaning, it is here that it is proclaimed and claimed loud and clear. This small cheese dairy above Poligny is dedicated to raw cheese specialities: butter, cream, fromage blanc, comté and the house monopoly: "Le bleu de La Marre". It is to the credit of the cheesemaker Paul Jeusset to have created this product. Produced in 2 kg tomes after 15 days of maturing and pricked by hand so that it is blue, this raw blue is softer and creamier than its predecessors. 2 Comté cheeses are also available, one sweet and one fruity, with Martine's smile as a bonus.
