Lilian Rampin, a wine "fondue", undertook a wine tour of France in 2012 after the Paris Wine School. Her project was to open a theme bar in her hometown. On his return, he therefore founded his Clavelin, a nod to the emblematic bottle of vin jaune. His cellar/bar/restaurant is also located in a street steeped in history since the illustrious wine scientist Louis Pasteur was born there a few houses further on. The entrance to the establishment sets the tone as you enter a renovated antique cellar where rustic meets modern. The tables rest on barrels. Lilian also has a shop area: 250 references in wines, beers and spirits that it also sells to private individuals. The regional accent can be found in every aspect, starting with terrines with Jura wines and dishes; sausages with vin jaune, poulsard and macvin. The same goes for tapas and cheese- and sausage boards, which delight night owls, especially on the terrace. A curiosity: this risotto of the sea with spinach cream. Finally, the welcome here is always the same.
