At the exit of Besançon, the village of Ecole Valentin where Jean-François Mayor receives guests in small groups as well as in large assemblies. The setting is impeccable, its cuisine is rich in French culinary traditions: sheets of foie gras, pigeon à l'absinthe or encore of beef fillet at the keyring du Jura.
