Xavier Baldovini invites you to take a virtual tour of his artisanal cheese dairy, located in the heart of the maquis on the eastern coast of Corsica. Authentic Corsican cheeses are made here, with all the tradition and flavor that means. Xavier makes Petit Brebis and Fiore di Montaggna sheep's tomette, Fleur de Montagne, Broccio Passu AOC, Corsican tomettes, Corsetin de brebis... Know-how handed down from father to son. An ideal place to discover all the local flavors, in an idyllic setting.

Xavier et Martine transmettent avec passion leur savoir-faire fromager depuis plus de 30 ans. Gage de qualité et de renommé, leurs produits font souvent l'objet de prix chaque année : salon de l'agriculture a Paris, concours international de Lyon ou d'autres. C'est un réel plaisir d'échanger avec eux et d'en savoir plus sur la façon dont ils travaillent. Fromages au lait cru avec du lait issus d'à côté, ça se ressent dans l'assiette. La boutique regorge d'autres produits tout aussi bon pour accompagner votre assiette de fromage : charcuterie, confiture, miel, vin, huile d'olive...
Attention, la boutique est ouverte uniquement le matin de 8h à 13h
