BISCUITS FOSSIER
The Maison Fossier opened its doors in 1756 as a small artisanal biscuit factory. In 1775, its biscuits were present at the Coronation of Louis XVI in Reims, and the biscuit factory became the King's supplier. In 1845, a certain Monsieur Fossier, a baker by trade, took over the biscuit factory "Maison Mère des biscuits de Reims" and its delicacies. Today it is the only representative of the biscuit-making tradition of Reims. Also to be discovered: the Champagne shortbread, macaroons and the Charles VI, a double shortbread made with pure chocolate butter.
