Jacques Beaufort's vineyards are located in Polisy and Ambonnay. Suffering from severe allergies to synthetic products from an early age, he converted his vineyards to organic farming in 1971: a near-revolution in a region where environmental issues were not yet a major concern. His wines are full of finesse and tension, like the cuvée Polisy, a harmonious blend of pinot noir and chardonnay, marked by clean acidity and elegant minerality.
