We like the warm welcome, the old press and the beautiful vaulted cellars that we find here. Unavoidable, the Horiot champagne deserves a visit for its cuvées: the special Cuvée Jean-Baptiste, a blend of mostly chardonnay and pinot noir, with its beautiful golden yellow color; its Champagne Brut Rosé, elaborated by maceration in wooden vats, with a dark color compared to a blended rosé (white+red mixed), a pretty raspberry color.

The Caveau des Riceys is a warm place that allows tourists or locals to take a break and discover the three AOCs of the town as well as the products made in Aube. To enhance the tastings, you can eat planks of local delicatessen and cheeses, and if you feel like it, invest in nice spittoons and embark on the adventure of oenologists. Themed evenings, oenological or otherwise, are very popular, but require registration. The tables on the terrace are a good place to rest in the middle of a stroll through the vineyards.

The brand was created in the early 1970s, inspired by the name of the 18th-century seigneur of Les Riceys: the Marquis de Pomereuil. Elegance and character: the house's range includes the Cuvée des Fondateurs, a blend of 2/3 Chardonnay and 1/3 Pinot Noir. Champagne Marquis de Pomereuil also produces two champagne rosé cuvées, Rosé des Riceys and coteaux-champenois. Special mention goes to the coteaux rouge, with its fruity, supple and slightly woody aromas.

The Jacques Defrance estate, located in the heart of the Côte des Bar, has been producing an exceptional range of wines since 1867, including the famous Les Riceys rosé. Since 1988, Christophe Defrance, at the head of the vineyard, has undertaken a reasoned culture that respects biodiversity. All the soils of the domain are mechanically cultivated. And since 2017, the estate is certified Terra Vitis and more recently HVE level 3. A favorite is the Natives cuvée and its notes of mirabelle plum and pear.

At Champagne René Bauser, we notice this cadole, the traditional shelter of the winegrowers (a flat stone hut), which has been reconstituted here. We are welcomed in the vast luminous room of the house to discover the work before starting a visit to better understand the elaboration of the local beverage. Champagne, rosé des Riceys, côteaux-champenois are elaborated here; we are taken in the long vaulted cellar decorated with tools and old machines, then we go up by a staircase to find ourselves in the cadole.
