Baptiste Cochereau, Marie Baillet and Louise Barthélemy set up their chocolate factory in Notre-Dame-d'Oé. After renovating the premises over the summer, they opened a tea room and two production laboratories.
They offer a journey into the world of flavors, using products from different origins. Their current beans come from Tanzania, Colombia, the Solomon Islands and the Vanuatu archipelago (Oceania). The on-site workshop transforms the cocoa beans into chocolate. Roasting, grinding, refining and conching take place in the laboratory adjoining the tea room, behind picture windows. After molding and coating, the bars are packaged on site.
Baptiste the chocolate maker: he transforms the raw materials into "basic masses" (chocolate, pralines or spreads). He also markets the products to professionals, while Marie and Louise are the "tablet tamers": they turn these basic masses into attractive finished products.
