This nineteenth century hostel has been visited by the famous novelist Balzac. The hostel, one of the most brilliant tables in the department (a Michelin star), owes its name to Mrs. Cognet, known as the Cognet, a fine cook that Balzac immortalized in the Slider. Quand on avait une étoile et qu'on désire la récupérer, on ne peut pas se permettre de servir en apéritif un fond de bouteille de champagne chaud et éventé.
Le repas a été ensuite difficile à digérer. La prise de commande désagréable par la patronne. Il est temps de prendre retraite.
