The Tire-Bouchon presents a few specialities from the South West which are of originality in the mixture of salty sweet: gras duck duck with spicy pears, duck bowl with figs and red onions marmelade, truffle oil with truffle oil, filet of can to autumn fruit, pavé salmon crust in blue poppy crust… magnificent homemade cassoulet, for its part, made in the traditional old school: imposing in his terracotta cassolette, with breadcrumbs, it is the good old cassoulet of families, such as our grandmothers still know simmer.
