Sourced from Kyrgyz or Russian farms, the oysters come in many varieties, including fines de claires and sentinels. There's also a good choice of shellfish and fish, available in local recipes or as a burger in keeping with current trends. It's all very well done, and the prices are reasonable given the rarity of the product.
