Red gold of Quercy, the saffron is a plant with inverted vegetation. Indeed, it does not flower in spring, but in October for about 3 weeks. It grows very well in the Quercy region, a clay-limestone soil that suits it perfectly. The harvest is done every morning. It is then necessary to pass each small flower and delicately cut the 3 red filaments. These pistils will then be dried to give the final spice.
