A man in love with his land, he cultivates a wine that is recognizable among thousands, respecting traditions and a unique grape variety on this land, the iron servadou. Jean-Luc Matha offers red, white and rosé wines, as well as a wine of thirst, as he likes to call it. He innovates with aperitifs made from red wine and green walnut, or wine and dandelion flowers.

Anne-Laure and Alexandre Alazard, in their early forties, took over the family business and replanted the vineyard that existed here a few years ago. Twin brother and sister, they have transformed the sheepfold into a tasting cellar and it is here, accompanied by a few slices of Aveyron bread, that you can taste their production: a rosé and two reds, and soon a sparkling wine to make your aperitifs frothy. All these beverages are matured in barrels and bottled directly on this 6-hectare property, formerly devoted to cereal cultivation.

DOMAINE MOUSSET

Domaine Mousset is one of the representatives of the small vineyard of Entraygues-le-Fel. These farmers have diversified their activity initially centred on livestock farming. Today, they are contributing to the rebirth of the vine on these half-Rouergat and half-Auvergat hillsides (part of the vineyard encroaches on the Cantal). Les Mousset (which has gone organic) produce red and white wines on eight schistose terraced hectares facing south, at an altitude of between 300 and 400 metres. The sandstone and schist soils are subject to the Mediterranean influence and to strong thermal amplitudes. DOMAINE DE LA BARONIE FRANCIS COSTES

We have to take the two hectares of this small producer towards Villecomtal in this baronnie. Francis Costes and his son lead the vineyard in parallel with the management of a herd of cows and reserve special care. The family winery is located under the house and is modernizing in a constant quality concern. Father and son are not prepared to give up their vines, exposed to the south behind the farm, that the first one preserved by mansois after the freezing of 1956 while others turn to more productive grape varieties. This attachment to the traditional varietal, these working methods, is now in a rustic wine that has made itself a beautiful reputation.

Thirteen producers are working to improve these wines classified as AOVDQS since 1965. The black gamay represents 60% of the grape varieties, the rest consists of pinot noir, negret, and mansois - servadou iron.

On these steep slopes dominating the Lot valley, the visitor of good wines discovers a tiny vineyard from which the whites of Entraygues (chenin and mauzac varieties), as well as the Lef reds, come from. The first ones are cultivated on narrow schistose floors, which give the wines character and finesse. Fresh and fruity, these whites accompany remarkably trout and sweet cheeses from Cantal. The second, powerful and terriens, are appreciated on more consistent dishes like the Villages Auvergne. The white wine of chenin from Jean-Marc Figeac is a good illustration of Entraygues's wines: beautiful dress, finesse, liveliness, citrus aromas. A great success.

Contre Bertau has its six hectares of organic vines from Gamay, Syrah and Cabernet on the terrace. Each year it produces two red wines and one rosé alongside Millau. Converted to organic farming since 2002, these grapes are certified from organic farming. We love the wine grower's personality and its red wine les Deux Oliviers, tannic and round at a time, one of the best of the appellation. Bravo the artist!
