In the heart of the Côte des Bar, Gérard Demilly and his wife Françoise De Baere, two renowned winemakers, welcome you to their beautiful family estate, built on the site of Jean Baron de Bligny's former château. Supported by their son, a talented oenologist, they excel in consistency. Their invaluable vineyards enable them to produce wines that are both complex and fine. A particular favorite is Cuvée Rare Blanc de Blancs 2011, a vintage vinified and aged on lees in barrel. Perfect with a filet of St. Pierre!

Created in the 1970s and located in the Sarce valley, this traditional house offers 5 fine cuvées, including the Brut Tradition, made from pinot noir, the majority grape variety in the Côte des Bars, to be enjoyed on any occasion; the Demi-Sec, with a higher sugar content than the Brut Tradition, is perfect with foie gras or dessert. The Brut Prestige, a blend of chardonnay (80%) and pinot noir (20%), is best kept for special occasions. And let's not forget the Blanc de Blancs, perfect for warm summer afternoons and platters of shellfish.

At Champagne René Bauser, we notice this cadole, the traditional shelter of the winegrowers (a flat stone hut), which has been reconstituted here. We are welcomed in the vast luminous room of the house to discover the work before starting a visit to better understand the elaboration of the local beverage. Champagne, rosé des Riceys, côteaux-champenois are elaborated here; we are taken in the long vaulted cellar decorated with tools and old machines, then we go up by a staircase to find ourselves in the cadole. The family history of the Champagne house goes back to the ^18th century. Thomas, the tenth generation, took over the winery a few years ago from his father André Cheurlin. We want more than anything to pass on the family traditions and the Cheurlin-Dangin brand created by our forebears. Thomas continues to run the family estate from its historic premises. His specialty is this subtle blend of chardonnay and pinot noir.

Concerned about the environment, the Baudry house produces champagne with a viticulture in organic conversion. In the Classics, the Héritage cuvée is a 100% fruity pinot noir that reveals the roundness and aromatic power of this emblematic grape variety. The Cuvée Brut Millésime 2012, a blend of pinot noir and chardonnay, is a round wine that expresses itself in the mouth with delicate fruit, typical of chardonnay.
