The Cellier Saint-Pierre is a reference in terms of good wines. Located opposite the cathedral, whose square has been redone, the cellar offers a choice of over 500 references. The Champagne region is well represented with great houses as well as harvesters-manipulators from the Aube region, then the offer opens up to other regions, with stronger and international spirits such as a range of Japanese whiskies. Pascal, Pierre and Aurélien Gerbais manage 14 hectares of vineyards, mainly planted with pinot noir and chardonnay, but also with meunier and a "forgotten" grape variety: pinot blanc vrai. The vines produce a fine range of Champagnes, all of which are made here in the family press: Réserve, Rosé, L'Audace, Rosé de Saignée, Coteaux Champenois Rouge, Prestige and the jewel in the crown, "l'Originale", a 100% pinot blanc Champagne, an extremely rare and astonishing wine to pack in your suitcases and impress your guests!

La Belle Gabrielle is the store where the wines produced by the cooperative uniting about a hundred wine growers of the Essoyes region are sold under the name "Champagne Charles Collin", named after one of the founders. "La Belle Gabrielle" is not only the name of the establishment, but also that of one of the vintages of Charles Collin, which you can buy in this store located near the Espace Renoir. Other vintages will also delight you among the traditional vintages, the Prestige vintages and the vintage champagnes.

We like the warm welcome, the old press and the beautiful vaulted cellars that we find here. Unavoidable, the Horiot champagne deserves a visit for its cuvées: the special Cuvée Jean-Baptiste, a blend of mostly chardonnay and pinot noir, with its beautiful golden yellow color; its Champagne Brut Rosé, elaborated by maceration in wooden vats, with a dark color compared to a blended rosé (white+red mixed), a pretty raspberry color.

The Caveau des Riceys is a warm place that allows tourists or locals to take a break and discover the three AOCs of the town as well as the products made in Aube. To enhance the tastings, you can eat planks of local delicatessen and cheeses, and if you feel like it, invest in nice spittoons and embark on the adventure of oenologists. Themed evenings, oenological or otherwise, are very popular, but require registration. The tables on the terrace are a good place to rest in the middle of a stroll through the vineyards.

This family business is currently managed by Didier Goussard, oenologist, and Jean-Claude Dauphin. Their Champagne Brut Tradition is a 100% pinot noir cuvée that will be the perfect accompaniment to traditional dishes and local cuisine. The Champagne Brut Prestige (60% Chardonnay and 40% Pinot Noir) is perfect for an impromptu aperitif. A favorite is the Brut Rosé, with its aromas of candied fruits and its sweet and fresh flavors. Today, Isabelle and her husband Michel run the estate, preserving the family tradition. This new generation of winegrowers has focused on exports (over 60% of total sales). Their 11-hectare vineyard is cultivated with a truly eco-responsible approach, using as few chemicals as possible. The grape varieties planted are predominantly Pinot Noir (80%). The wines faithfully reveal the imprint of their terroirs. Hats off to the Brut Nature and its aromas of rhubarb marmalade.

It was here, in Avirey-Lingey in 2005, that Davy Dosnon and Simon-Charles Lepage decided to create a champagne house from scratch. The house cultivates 2 ha of vines and sources 5 ha from other winegrowers. The style of the range on offer is straightforward and easy to understand, with low dosage wines that reflect a genuine quest for finesse. You'll discover 8 fine cuvées, including the delicate Alliae with its candied citrus notes. Divine!

Created in the 1970s and located in the Sarce valley, this traditional house offers 5 fine cuvées, including the Brut Tradition, made from pinot noir, the majority grape variety in the Côte des Bars, to be enjoyed on any occasion; the Demi-Sec, with a higher sugar content than the Brut Tradition, is perfect with foie gras or dessert. The Brut Prestige, a blend of chardonnay (80%) and pinot noir (20%), is best kept for special occasions. And let's not forget the Blanc de Blancs, perfect for warm summer afternoons and platters of shellfish.

Daughter of a harvester-manipulator and a harvester-manipulator herself, Brigitte Baroni set up her own winery in 1980. She manages a 2.5 ha vineyard located in Celles-sur-Ource, Landreville and Viviers-sur-Artaut, producing around 20,000 bottles a year. Its range includes Champagne Brut Tradition and Rosé de cuvaison. On the tour, you'll discover a traditional working method, with a wooden press and bottles lying on laths.

In the heart of the Côte des Bar, the Manoir Champagne Devaux team welcomes you in an authentic and prestigious setting. The visit of the domain is proposed to you in free access, to discover the Champagne appellation and the elaboration of its wine, in the greenhouse and the impressive dovecote. You also have the possibility to taste the champagnes or the rosé of Riceys in the store. Finally, you can book your chic champagne picnic or the tasting workshop of your choice. A place conducive to sharing delicious moments!

Just outside the village of Baroville, you'll find this beautiful brand, which operates 110 hectares of vines. No fewer than 50 winegrowers have joined forces to bring this wine cooperative to life. It takes its name from the association of the first letters of the names of the three villages it represents: Baroville, Fontaine and Arconville. The house wines are sensational and deserve to be known. A particular favorite is the cuvée Un Voyage dans nos coteaux, as well as their wine tourism activities. De Barfontarc also offers a comfortable gîte. A real pleasure!

At this 7.5-hectare Champagne house in the Côte des Bar region, growers cultivate two grape varieties: Pinot Noir and Chardonnay. This estate, whose roots date back to 1847, is today guided by the work of Brigitte and Philippe. The duo cultivates with love and good sense a magnificent 18 ha vineyard certified HVE. Solar panels, rainwater harvesters, bark, manual plowing, everything is done to respect nature. The house's vines, planted in the late ^19th century, enabled Marcel Vézien to create his own champagne in 1956. The cuvée Effervescence 56 bears witness to this. Today, the house boasts some twenty hectares. The range bears highly poetic names: Secret d'Éclairés, Lumière de l'Aube, Nuit de Rubis, Celles que j'aime, Terre d'Artistes and Souvenir d'Ancêtres. We've also fallen in love with their well-crafted rosé des Riceys, ratafia and marc de champagne. With them, cultivating the "home-made" spirit really pays off!

Founded in 1974, Michel Furdyna's champagne estate cultivates 8 hectares planted with 90% pinot noir, 6% chardonnay and 4% pinot blanc. These independent winegrowers offer a very fine range of 10 champagnes, original, gourmet and often award-winning. A real favorite is the "Les Vieux Millésimes" collection, the oldest of which dates back to 1966. These deep, complex wines have a striking aura. The Cuvée Secrète, blended with pinot noir, chardonnay, pinot blanc, pinot meunier, arbane and petit meslier, should not leave you unmoved either!

Founded by Edmond Cheurlin at the age of seventeen, in 1898, in the small village of Celles-sur-Ource, the Cheurlin family estate has been the object of patient family attention that has endured over the generations. The vineyard is spread over five communes, all of which have their own particularities (sunshine, acidity...). All the plots are vinified separately and the cuvées are made by blending two years, which brings balance and regularity. These cuvées are six in number:Carte noire, Réserve, Rosé, Cuvée Prestige, Chardonnay, Millésimé.

In the Côte des Bar region, discover the Cheurlin-Dangin estate. Champagne Comte de Cheurlin (for professionals) offers three traditional and three Premium cuvées. Champagne Cheurlin-Dangin produces seven cuvées, an vieux marc de champagne and a ratafia. Thomas Cheurlin, true to his values, has decided to produce two champagnes of vegan excellence: the cuvée Végan Blanc de Blancs and the cuvée Végan rosé, with no animal substances whatsoever from harvest to packaging.

With a surface area of 5 ha, the vineyard of Cédric Bouchard is one of the most magical in Champagne. After learning the winegrowing trade with his father and buying the family estate, this demanding winemaker has made many changes. The culture of the vineyard is close to the biodynamic one. Due to their growing success, the wines are now only available at certain renowned wine shops. Les Ursules, an enchanting 100% pinot noir, is a favorite.

In this terroir of Celles-sur-Ource, we find the Richard Cheurlin property, whose family viticultural traditions have endured. The sunshine is favorable to the elaboration of beautiful wines. The range of wines offered includes high level vintages and shows the quality of the work of the winemaker and the care taken in the blending. We can find the Brut Carte d'Or, a wine which is distinguished by its freshness and its floral aromas. The Blanc de Blancs cuvée will not displease the amateurs of tense chardonnay.
