This place is better known as Villa Bissinger. The International Institute of Champagne Wines is a school where you can learn about the wines of Champagne. For the simple visitor: here you can discover temporary exhibitions in the basement or, on the theme of wine, the educational cellar which illustrates the terroir and its trades, whose geography is also explained. Several paying programs allow to discover the champagne.

Creator of exceptional bubbles.Artisan-winegrowers since 1905 on the land of Aÿ, one of Champagne's finest crus, Nadège & James Richard-Fliniaux today perpetuate with wisdom and passion the ancestral know-how handed down to them by Fernand Fliniaux, Nadège's grandfather. Production of Richard-Fliniaux champagnes is confidential. Five Grand Cru cuvées are produced in small batches (a few hundred bottles per wine).

The Gosset-Brabant family are true purists who work their wines according to the rules of the art, and prioritize qualitative excellence at every stage of the winemaking process. Today, Michel and Christian Gosset manage a 9.6-hectare vineyard planted with 65% pinot noir, 15% chardonnay and 20% meunier. Two cuvées in their range melted our hearts, starting with the Grande Réserve Brut and its notes of cooked peach and honey, followed by the Millésime 2002, which reveals a sublime aromatic bouquet of white flowers and lemongrass.

Here, the creation of Champagne wines has followed in the footsteps of the wine nursery business, a family tradition since the turn of the century. In this beautiful vineyard, care is always taken to select the best plants according to their genetic characteristics and the plots from which to appreciate the quality of the hand-picked grapes. For visits or purchases, the welcome is warm and friendly. The Rosé Grand Cru and the Millésime Grand Cru are surprisingly complex and full of charm.

Pierre and Marie-Paule Cheval-Gatinois, who represent the ^11th generation, will tell you all about their 7.5 ha, 100% Pinot Noir Grand Cru vineyard. Here, the musts are vinified vine by vine and variety by variety. Disgorgement is still carried out the old-fashioned way, on the fly. After an hour's visit, we move into the reception room to discover the entire range. The wines are of the highest quality, especially their coteaux-champenois "Aÿ rouge", made with grapes from their two oldest plots.

Claude Giraud has a great imagination when it comes to sharing the history and spirit of champagne. Through Henri Giraud's estate, he invites you to discover the origins and techniques of champagne by visiting the cellars and taking part in a commented tasting of four emblematic cuvées from the house. The (AY) xperience package, on the other hand, allows you to taste 6 of the house's cuvées after a tour of the estate and its cellars, accompanied by refined delicacies during a "food and wine pairing" tasting workshop.

Today, the^3rd generation of winegrowers skillfully manage this beautiful 10-hectare vineyard in Mareuil, Avenay, Bergères-les-Vertus, Le Mesnil-sur-Oger and Oger. All 3 traditional Champagne grape varieties are represented. After a friendly guided tour of the cellars and press, it's time for a tasting session. Our favorites are the Brut Millésime Blanc de blancs 2018 and the Brut Millésime 2012, two exceptional cuvées that are currently unavailable due to their overwhelming popularity!

In this family, we have been winegrowers from father to son for 3 generations. The vineyard of about fifteen hectares is worked with thought and common sense (VDC and HVE level 3). The House ships more than half of its production worldwide, which shows how its success is growing. The welcome at the House is always warm and allows you to discover the century-old cellars, dug under 25 meters of chalk, with a capacity of 3 million bottles that age for a minimum of 48 months. The House also has a very beautiful residence with 5 rooms.

The creation of this family house goes back to the 17th century, with today a vineyard of 13 ha. The vineyards are located on the hillsides of Damery, Hautvillers, Fleury-la-Rivière and especially Cumières, and have been worked under integrated pest management for over 15 years. The work, plot by plot, the vinification by small batch, in the old way, and wines which age for the most part in oak barrels. At the Geoffroy's, we like to work more particularly the red grape varieties, pinot noir and pinot meunier to elaborate champagnes of a rare quality.

Winner of the prize for the best traditional French baguette, Patrick Baillet continues to delight the people of Ay-Champagne! In his bakery, he offers you breads made in the pure tradition of craftsmanship from 100% French wheat and delights you with sweet and savory treats, from flaky brioche to Champagne cookies, including baillettes, an assortment of mini-sandwiches made by him. On the workshop side, a nice range of macaroons and chocolates are to be discovered, without forgetting the "Boko", good home-made dishes and desserts packaged in jars and gourmet courses for those who wish to learn pastry making!

A good house which knew how to exploit the very good soil of Aÿ while keeping a very old house tradition, the name of Lallier having been perpetuated during five generations. It is today Francis Tribaut who keeps this regional jewel alive with a range of great personality. The vintages use the best of the vineyard, pinots noirs on Aÿ and Verzenay, and chardonnays on Cramant and Avize. The range is divided into 3 collections: the Permanent collection, the Memory collection and the Icons collection, a Grand Cru work aged under cork.

The name Collet is synonymous with quality and union. This quality is reflected in the almost tailor-made cuvées, whether it is the Brut, the demi-sec, the Art Deco Brut, the extra-brut, the blanc de blancs, the rosé, the 2008 vintage or the Private Collection and in particular, in this one, the Brut Vintage 2008, an exceptional champagne, with a strong personality and all in lightness. This wine, aged for a minimum of 8 years, is a blend of 75% Chardonnay (for elegance and finesse) and 20% Pinot Noir (for structure and power).

One of the most famous champagne houses in the region, with a reputation that has remained intact and respected for decades. Vines on the beautiful terroirs of Aÿ or Avenay, a very famous terroir, that of Clos des Goisses, a house full of nobility in the world of prestigious champagne. Sustainable viticulture, traditional vinification with partial use of wood for the first fermentation and the maturing of the reserve wines. Among other jewels, the Clos des Goisses cuvée is one of the most memorable jewels of the house.

Located in Aÿ, one of the Montagne de Reims' most famous Grands Crus de Noirs, where many famous houses are based, this contemporary domaine produces champagnes full of elegance and freshness. We particularly like their Grand Cru Blanc de blancs. A lively, chiselled, complex wine. The chardonnay bouquet expresses itself perfectly, offering a deliciously tangy finish. The Bauchet family has been cultivating its 34-hectare vineyard, harvesting its grapes and crafting its champagne from father to son since 1920. 5 generations of artisan winemakers work with passion on a unique terroir full of diversity and uniqueness. The broad, rich mosaic of vines spread across the different crus of the appellation enables the Chardonnays and Pinots to produce a high-quality, authentic and elegant Champagne that expresses the personality of its terroir of excellence. Our favorite is the Cuvée Signature Premier Cru. Emotions guaranteed!

The House of Billecart-Salmont was born in 1818, with the union of François Billecart and Elisabeth Salmon. Today, the fifth generation is in charge of this wonderful estate. They are balanced and fine champagnes whose reputation is well established. The Extra Brut is a superb wine. Its pale yellow color gives a glimpse of beautiful, fine and abundant bubbles. How can we not mention the Clos Saint-Hilaire cuvée, the pride of the house? A unique and confidential cuvée, the product of a plot of land and vines maintained since 1964.

Xavier Gonet and his wife Julie Medeville took over this estate in 2000, with its 12 ha of Premier Cru and Grand Cru vines. For over 20 years, the duo has been magnifying the terroirs of Champagne and Bordeaux. The house wines have frank characters and show good vinosity. Praised by the press, the Cuvée Blancs de Noirs exudes beautiful, fruity, gourmand and powerful aromas. Discover it with your guests as an aperitif!

Since 1998, it is Fabrice who brings a new breath to the family domain. With state-of-the-art techniques and sustainable viticulture, the 15-hectare vineyard is evolving without ever losing its identity, so dear to the family. This talented winemaker produces wines far from dogmas and trends. They are particularly fond of Grande Vallée, their emblematic wine, made with Extra-Brut and aged in French oak barrels and tuns. The Valnons are not to be outdone! This 100% Chardonnay Extra-Brut Millésimé, made on a pinot noir soil, perfectly reflects the audacity of its creator.

Since it was founded in 1910, Maison Hamm has passed down a unique savoir-faire from generation to generation, the subtle art of blending to produce exceptional, elegant and generous champagnes. Today, Brigitte, Michel and Claude carry on the family tradition, offering a range of 7 cuvées and one ratafia: Initiation and Équation, two Brut blend cuvées, Rosé Adéquation, La Preuve par Trois (Doux or Extra-Brut), made with 33% of each of the three Champagne grape varieties, Cuvée de Réserve Signature and Millésime 2012.

Founded in 1838 by William Deutz and Pierre-Hubert Geldermann in Aÿ, this prestigious Maison is today run by the same shareholder as Maison Roederer. The terroir, however, remains unchanged, and the vines planted there produce top-quality grapes every year for a top-of-the-range final result. Deutz Champagnes can be found in all the best wine shops in France, as well as on the finest tables around the world. Amour de Deutz Blanc de blancs 2011 is an ideal match for caviar or lobster.

The Dauby brand was born in 1956, when Guy and Thérèse Dauby began marketing their wine themselves. Today, the couple's daughter, Francine, and her daughter, Flore, are carrying on the family tradition. The eight-hectare estate is located on five different crus, with a predominance of pinot noir, which gives the Dauby wines their full-bodied, lively and fruity character. The Reserve cuvée is the signature of the house.

Founded in 1860 and owned by Bollinger Champagne since 2005, Ayala is one of the "little big" brands in the world of champagne, which both sells worldwide and keeps its size small enough to be able to source only from terroirs classified as grand cru or premier cru. It is one of the few houses that still produces a non dosed champagne (without sugar addition). On site, the property is magnificent, luxurious and serene, and while visits are by prior arrangement, the store is open Monday through Friday.

In 1829, Champagne's Emmanuel de Villermont hired a young German salesman, Joseph Bollinger, who married his daughter and inherited the vineyard. Almost two centuries later, the family, through its descendants, is still at the helm, maintaining the quest for excellence. Boldly crafted Pinot Noir gives the house wines their inimitable style. Our favorite is the Spécial Cuvée. The fruit of perfectly regular blending, thanks to the conservation of reserve wines in magnum, this wine is made for fine gastronomy.

The Édouard Brun house has a family vineyard of more than 8 hectares located in the Montagne de Reims, as well as in Aÿ and Mareuil, and composed of pinot noir, meunier and chardonnay blanc grapes. Since 1994, Mr. and Mrs. Delescot are assisted by their sons. The cellars of the house, several hundred years old, allow the champagne to age at a constant temperature. A recognized address which is worth the detour with a range of exciting champagnes.

Born of the passion of three Champagne lovers eager to share with you the riches of their beautiful terroir, this cellar is the ideal place to discover extraordinary champagnes, the fruit of the know-how of passionate winemakers, craft beers, spirits of character; not forgetting local specialties to match your bottle on the delicatessen side, authentic terrines of red turkey or capon, with ratafia or champagne marc, to take away or enjoy on the spot in the wine bar.

The domain of Champagne Berat, built on a Templar site, is literally amazing! 60 hectares initially intended for the cultivation of land, then for cattle, then for three generations entirely devoted to the culture of the vine. You can also take advantage of this natural space to recharge your batteries in the gîte, which has three rooms with a refined and sober decoration. We recommend the Roulotte, which sleeps two, very elegant.

This little Champagne jewel spread over 7 parcels entirely enclosed by walls (one of the few to obtain this appellation) is managed by Charlotte, the^5th generation, and her father Hervé Le Gallais. Their status as harvesters and handlers is a privilege to control the entire process from harvest to marketing. Sustainable cultivation, rigorous monitoring of the vineyard, slow and qualitative maturation at the rhythm of nature and the seasons contribute to the elaboration of cuvées that are each the reflection of a parcel, a blend and a terroir.

This 4.2 hectare vineyard, dominated by Pinot Meunier, is managed in a reasoned culture thanks to techniques used in organic viticulture. Certified HVE since 2010, biodiversity is thus preserved and the use of phytosanitary products is greatly reduced. These quality requirements are reflected in their 8 "hand-crafted" vintages, which are made with rigor, precision and authenticity. The history of this family business only began in 1980, and yet the quality and awards are there. They only work with wines matured with the vintage concept, the result of an ancestral know-how, the alchemy of the nature of the soils and the quality of the 3 Champagne grape varieties, in order to elaborate champagnes that express themselves after three years of cellar and rest. Paul Hazard champagnes are characterized by an old gold color, by a fine bubble as well as by very greedy aromas and a final note.

Independent winemakers for over 35 years, committed and proud of their profession, the people who make up the history of Champagne Lacroix take care of all the stages of winemaking and take real pleasure in showing the fruit of their precious work. Anxious to offer champagnes of the highest quality, the estate has been equipped with a modern pressing center and vat room since 2010. Since 2016, you can also discover their tasting space. A vineyard of 13 hectares with a strong dominance of pinot meunier allows the production of 9 wines.

The visit of this family exploitation, through an offer of 4 different tasting circuits, starts with the vineyards, then the three Champagne grape varieties. We then go to the modern presses where we will see beautiful murals that illustrate the work at the beginning of the century. In the winery, we are amazed by the oak tuns decorated with sculptures. Finally, tasting inside a huge barrel that can contain the equivalent of 50,000 bottles!

Today, Vincent Laval is in charge of the family business created by his father Georges in 1971. On this estate, all the vines are grown according to the principles of organic agriculture. The different cuvées are patiently aged for 2 to 4 years in beautiful vaulted cellars that can be visited. Special mention goes to Les Hautes Chèvres, an organic Brut Nature 2013, made from old meunier vines with very low yields. A marvel to be enjoyed with warm apple foie gras. Cheers!

This renowned House is now run by Jean-Baptiste Geoffroy, who strives to vinify fine champagnes from his Premier Cru terroirs. Having happily examined the entire range, from champagnes to red Cumières and ratafias, here are our favorites: the Cuvée Pureté. With no dosage, its precision is impressive. Cuvée Blanc de rose, made by maceration of pinot noir and chardonnay, is sublime with red tuna sashimi. And let's not forget the Cumières rouge Meunier 2015. Sensational with red mullet!

From the outset, this family home impresses with its original approach. If time permits, your hosts will take you to discover their 10 ha vineyard, certified HVE and VDC, in a 2CV. If at the end of your ride, you feel like perfecting your knowledge, you will be able to access the museum below the house, which tells the story of the vineyard through an impressive collection of tools. You will then taste their expressive wines.

In Cumières, José and Sébastien Sanchez, talented harvesters and handlers, passionately perpetuate the know-how inherited from their forefathers. Their 5-hectare vineyard, certified organic since 2016, is cultivated using virtuous, common-sense practices. You'll love the organic Rosé de Saignée and its surprising color, as well as the Cuvée Prestige Millésimée 2012, which will enchant you with its finesse. Cuvée Flore, a 100% Chardonnay Grand Cru, reveals light, fruity notes thanks to 5 years in the cellar. The choice is yours!

Founded in 1878, Veuve Maître Geoffroy has evolved perfectly with the times; techniques have been modernized without leaving behind the traditional spirit of the family. Today, the vines of pinot noir, meunier and chardonnay are cultivated using sustainable methods. The Cuvée Brut Carte Rouge, the emblem of the House, is a favorite. Full of finesse, it is also very round with its fruity side. The Carte d'Or Millésime is not to be outdone. This very expressive and complex wine will have its place at the table.

Of French-Filipino origin, Florence Duchêne is a young winemaker full of ambitions! Since her return to the Domaine in 2012, she has been energetically perpetuating the work of her ancestors while bringing a more spiritual and creative vision thanks to her numerous trips around the world. HVE certified since 2018, the vineyard is worked in a reasoned approach where the well-being of the vines is paramount. The House offers 6 wines of fine gastronomy.

In Nomine Terrae. Founded in 1912, this family-run company has always been ingenious and visionary. By 2031, it aims to convert 100% of its vineyards to organic farming, and is constantly looking for ways to minimize its carbon footprint. Among the 6 wines, we're sure to fall in love with the Cuvée Réserve de la Terre, an organic champagne with a relaxed expression, and the Cuvée Vinothèque 2012, a miraculous vintage. Actor Leonardo Di Caprio recently joined the company as a minority shareholder.

This family-run estate cultivates 7 hectares of vines that enjoy a warm, luminous exposure on the slopes of the Marne valley. The estate's emblem is a radiant sun. Here, you can visit the cellars and discover the wines through a tasting session. The entire range is beautifully crafted. The Jadis and Brut Nature Éclats cuvées are particularly appealing. The House also offers a Champagne ratafia and a Fine champenoise.

The history of this family begins in Damery in 1857 but today it is David and Cécile who run the business. The 11 ha vineyard is planted with the 3 traditional grape varieties to favor judicious blends. Here, malolactic fermentation is not practiced in order not to modify the organoleptic profile of the wines. We have chosen the Cuvée Cécile, a very fruity 100% meunier that will be a delight with mature cheeses.

Founded in 1915, Champagne AR Lenoble is one of the few champagne houses to remain entirely family-owned and independent. Today, the^4th generation, embodied by Anne and her brother Antoine, is at the helm. Guarantors of ever-improving but never-equalled quality, together they craft champagnes of the utmost precision from their 18-hectare vineyard on the appellation's finest slopes. A real favorite is the Brut Nature "dosage zéro mag", a very fresh and delicious wine to try with snacked fish.

Today, Philippe Haton, the^5th generation, holds the torch with his wife Isabelle and daughter Élodie. The same rule - tradition and identity - prevails in the making of each cuvée. The Cuvée Carte Blanche is the House's emblem. This Brut, with its lively bubbles, is easy to drink on any occasion. Founded in 1946, Delphine and Christophe are now at the helm of this house with a solid reputation. Their 30 ha of vines are cultivated using integrated viticulture methods. The cuvées are part of a simple, easy-to-understand range. We recommend the light-colored Cuvée Tradition, with its fine balance of fruit and flowers. A wonderful companion for an informal aperitif. In the land of Chardonnay, it's impossible to miss Cuvée Brut Blanc de blancs. Cheers!

For 5 generations, the Delabaye family has been carefully cultivating vines and making wine on the estate. The estate has 10 hectares of vineyards spread over ten communes. Special attention is paid to the vineyard. Today, Sylvie and Germain welcome you in their cellar to discover their convivial wines, including Brut Sélection, Rosé Brut de Saignée, Cuvée Victor Delabaye Millésimée and Cuvée Eloïse Millésimée Rosé. Champagne Anthony Betouzet is first of all the heritage of a family know-how. And it is also a pronounced taste for good and beautiful products with a touch of originality, of audacity... Anthony cultivates the vine in an eco-responsible way. With Emilie, his wife, they offer several collections of vintages: beautiful years of vintage, balanced blends and new limited series developed in collaboration with French artists.

The passing of time has led to the development of techniques, the concern for the environment has increased and it is now logical that the estate is cultivated in integrated viticulture. From its eight hectares of vines, the family elaborates a solid range of cuvées which honors in particular a beautiful Blanc de Blancs, with balanced aromas of citrus fruits and white flowers which one will taste as an aperitif. The cuvée Tradition is a blend of three grape varieties, with a dominance of Pinots, for a fresh, fruity and elegant wine, to be discovered at the domain.

The 4 ha vineyard, mostly pinot noir and chardonnay, is planted on a clay-limestone soil and enjoys a very favorable exposure. Arthur Marc, a passionate winegrower and heir of 12 generations, follows a reasoned culture, where small yields and meticulous harvests are legion in order to never compromise with quality. The 8 cuvées, exclusively made from first juices, without malolactic fermentation and skilfully blended, offer a beautiful aromatic complexity and a very good balance.

Three grape varieties make up the vineyard of this family business located on the right bank of the Marne: meunier (50%), pinot noir (30%) and chardonnay (20%). The family tries to create a champagne of soil, based on a reasoned viticulture, an atypical champagne elaborated from a beautiful aromatic palette and which combines with delicacy freshness and vivacity. If the house proposes traditional cuvées, it also elaborates confidential cuvées which will know how to question the champagne lover by their complexity and their originality.
