For many years, the Maison Rivière excels in cassoulet - prepared with white beans, confits, grilled sausages and cooked over the required time, delivered fresh in cassole or put into a box. This excellent cassoulet has been renowned for a long time. Other specialties will whet your appetite: rillings, pâté, foie gras… and dishes prepared like the coq au vin, the petit salé with lentils… You can taste the brand products prepared and served in the restaurant La Maison du Cassoulet in Castelnaudary, but also in Carcassonne, Toulouse, Lourdes, Font-Romeu and Saint-Lary. A heavy weight, a regional identity that gently rises from the 2013 health and media storm. It was his former owner Laurent Spanghero, the child of the country also known for his achievements in rugby in XV who, eager to "wash his honour", took over the reins. He separated from the eponymous society in 2009. In July 2014, the company was picked up by C.A. Holding and was renamed Occitane, cooked dishes. Jean-Christophe Tarrade has been delighting Chaurians for twenty-five years at Place de la République. In his workshop, the chocolatier likes to innovate, create, test flavour blends and unusual combinations that will surprise you. He's constantly pushing back the boundaries of gourmet creations, including the kouglof "soaked in syrup like Lenôtre used to make", the Chaurien (macaroon cookie with egg white and strawberry jam), and iced cassoulets.

Christophe Hernandez welcomes you amid the finest cheeses, charcuterie, preserves and spices available on the local market. For 53 years, the philosophy of the Grande Confrérie du Cassoulet has remained unchanged: to serve the prestige of Cassoulet, to spread and defend its reputation, and to ensure respect for quality. And to maintain the recipes of this culinary tradition, the Confrérie organises unrivalled festive events around cassoulet: the Grand Chapitre in spring and the Fête du Cassoulet in summer! La Belle Chaurienne is aptly named. Established since 1964 in Castelnaudary, it is the main spearhead of the local gastronomic know-how. Death to the food industry! The products offered by the shop of the cassoulet of Hôtel de France are only homemade. Here, Philippe Dunod, owner of Hôtel de France and its restaurant, offers you in his shop dishes that he serves at the restaurant, that is to say, that know-how and tradition are here inseparable. You will then find the unmissable fresh traditional cassoulet served in cassole or the canned one, cooked dishes like the Lauragaise goose gizzards, the duck with olives, homemade duck or goose foie gras, and cold cuts. The potteries of L'Atelier de Poterie artisanale Moreno are also on sale in the shop, and you can have the delicious dishes concocted by Philippe prepared in the oven. We do not sleep at the mill of Vivier! The mill turns, it turns! It is a whole know-how and a tool transmitted from generation to generation within a family of millers. On the edge of Castelnaudary, along the canal, the Moulin du Vivier perpetuates an ancestral activity of flour production and offers an introductory tour by reservation to explain the workings of the milling profession. The store of local products within the mill offers a variety of quality flours and seeds, with a focus on short circuits.

In 2006, Jean-Claude Visentin opened his boutique-labo, and today his son Anthony has taken over the reins of this fine establishment dedicated to traditional gourmet products. O de Mila is no exception, exploiting sweet potatoes and sorghum grown in the south of France. Linked by African memories and a common passion for beer, Michel and Guillaume, both agronomists, have joined their talents in this adventure that took root in Castelnaudary. 100% natural, gluten-free and GMO-free, Mila's O de Mila beer is brewed using the traditional East African techniques that Michel learned from his childhood in Rwanda's sorghum fields. This practice, combined with the two men's advanced French technological knowledge, produces a fine and authentic lager with an original composition.
