It's black truffle season in Périgord, with Tuber Melanosporum showing its face in late autumn. Now's the time to go shopping, especially as we're just a few weeks away from the festive season and its gastronomic specialties. Terrines, pâtés, mi-cuits, crépinettes... You'll find around thirty producers at the Brantôme market. The market is certified, which means that each truffle brought in is tested to meet the criteria and differentiate a Melano from a brumale. The price and use are not the same.
