A micro-brewery based on the outskirts of Rennes, France, Compoz has positioned itself at the top end of the market, specializing in the creation of bespoke beers for gourmet restaurants. Julien, Fabien and Charles, the brewers, have created limited editions for the Michelin-starred Racines restaurant, Le Balthazar hotel, Ferrandi school, Mathias Narcissot patisserie and Durand chocolatier in Rennes. Each beer is made with a clever blend of fruits, vegetables and rare spices: cocoa nibs; yuzu, ginger and Timut berries; karigoss and celery; buckwheat honey and saffron...
