Just 10 minutes from Auxerre, this hotel with very comfortable rooms is also an excellent bistronomic restaurant run by Chef Matthias Dias Gonçalves. It's all about finesse and creativity, with fresh seasonal produce sourced mainly from local producers. On the day of our visit, we feasted on the chef's excellent meurette with a poached egg in red wine and chocolate, followed by a pork loin in glaze, poached pear and shiitake, with caramelized onions. Before finishing with a revisited crème brûlée that we warmly recommend. One of the region's finest restaurants, without a doubt. And a favorite of the Petit Futé!
