Xavier Julien has always been passionate about his estate and one day wanted to create it. After a BTS in Viticulture and Oenology, he planted his first vines in 1997 in Auxerre-Vaux (in a place called "la Côte d'Or"). Now at the head of 4.7 hectares (in Auxerre and Chablisien), he is today the only independent winegrower in Auxerre. His estate, which takes its name from an old fortified tower in the town, offers chardonnay and pinot noir, including a burgundy côtes-d'auxerre "Terroir de Vaux" and a chablis Premier cru "Les Fourneaux".
