Alain Hertrich defines himself as a committed artisan baker, concerned with preserving the art of baking in its most authentic form. Therefore, he makes natural leavened breads that he kneads entirely by hand in a beechwood kneading trough! He uses organic flours from ancient seeds supplied by local mills and farms. Alain bakes his bread in a wood-fired oven with a Soufflenheim pottery hearth. The same goes for the pastries, brioches and other kougelhopfs... and the tarts flambées.
