Alain Hertrich isn't just a baker, he's the guardian of a forgotten savoir-faire, a poet of the loaf and a sculptor of the golden crust. In his workshop, everything is made by hand, kneaded in a beechwood kneading trough, with love and patience. His naturally leavened breads are baked over a wood fire, on a Soufflenheim pottery hearth. As for the flours, they come from ancient, organic and local seeds. And what about his viennoiseries, brioches, kougelhopfs... or his tartes flambées? A committed craftsman, rooted in his land, who gives bread back all its nobility.
