After St. Barth and St. Vincent and the Grenadines, Jacques, a Frenchman, and his wife Eileen, a Vincentaise, chose Dominica in 2019 to open their latest restaurant, one of the island's best addresses, which now boasts many regulars. Eileen, who trained at the prestigious Culinary Institute of America in New York, offers a Franco-Caribbean fusion cuisine based on quality produce. Fruits, vegetables and herbs are harvested in the morning from an organic garden at Délices. The flavors are well-balanced, and the menu changes almost daily.
