L'APOTHEK
A great lover of the Green Fairy in front of the Eternal, Jérôme Gangloff (former member of the Entracte team) has matured his project of a bar dedicated to absinthe for two years. He designed it entirely himself, drawing inspiration from the German apothecaries, the estaminets of the North and the spirit of the industrialist of the last century. All this revisits a little the universe of Adèle Blanc-Sec (the comic book heroine created by Jacques Tardi). The location of this bar in the heart of the cour Sainte-Anne (more dedicated to fashion shopping) may surprise you, but you immediately feel at ease. Here you can enjoy a good draught beer, and there, a hat on your hat with a superb and unique column that delivers well-frozen halves of Perle Pils or IPA and Alpirsbacher Weizen Hefe. There are also excellent cocktails (mojito, margarita, pina colada, caïpirinha, vaï...) and, of course, the queen of the place, the absinthe which is served according to the rules of the art: Verte de Fougerolles, Bonne Mère, Jade 1901, the selection is of excellent quality and 100% French. The Apothek also offers a nice choice of absinthes for sale, as well as specific fountains, glasses and spoons. Ultimately, L'Apothek intends to become Colmar's leading vegetarian and vegan café-restaurant, with small dishes made from fresh products from local organic sectors, in particular the spices found in the composition of absinthe (fennel, cumin, coriander, anise...). To be enjoyed as an accompaniment to an aperitif, for a game of yam, scrabble or belote, these games being made available free of charge!
