If you are in the Perche Ornais, do not miss the excellent Salers meat produced by Guillaume Lesage. The farmer works in organic agriculture while taking great care of his beautiful animals. He is also transparent about his practices and explains them on his website with a nice video. Rib of beef, tournedos, pot-au-feu or bourguignon meat, minced steaks, and many others can be found at the farm store of Orvilliers (in the town of Broue, at 14 rue Saint-Martin)
