Cracklins, boudin, gratons… These names tell you nothing? In this case, go to Richard, to taste these numerous louisianaises specialities. Cracklins are kinds of fat fried and crispy peanuts that you buy by weight. The sausage, mixture of pork and spicy rice, is eaten in the same way (with fingers). As for the gratons, they are the remains of a little, fried again! A break far from being dietetics but tasty.
