It is one of the emblematic restaurants of the Place du Marché. La Bourse has the charm of the great Parisian brasseries. Style, with its attentive waiters, bright rooms separated by vaults, a brasserie and, in the basement, superb 18th century cellars which house a carnotzet where raclette, fondues and pierrades are served, as well as pizzas. La Bourse also has a fine French brasserie menu with entrecote and home-made chips, sauerkraut and seafood in season, and shallot mitre.

Comme presque partout en Suisse, ce n'est pas donné. Cela dit, le cadre de cette vraie brasserie est chaleureux, la cuisine est bonne et le service aimable sans être obséquieux avec des raffinements non pas chichiteux mais au service du bien-manger : je pense notamment à une entrecôte servie en deux fois pour que le client puisse manger chaud même en finissant son assiette. Bon choix de vins, notamment du canton de Genève qui gagnent à être connus.
