The Cherbourg-based farmed salmon operation - created in 1991 - has succeeded in producing a product of excellence right from the start. The secret behind the success of France’s only salmon farm at sea? Salmon that have enough space and currents to swim and build up their muscles, and high-quality, carefully distributed feed. All this is protected by the dyke of Cherbourg’s large harbour, and the result of all this care and scrupulously respected specifications is a top-of-the-range, low-fat, very tasty salmon. Its quality far exceeds the standards imposed by the famous Label Rouge, with a fish concentration of 12 kilos per cubic metre of water, whereas the label imposes a limit of 20 kilos! Both in appearance and taste, it is very similar to its wild Irish cousin. While it is a guest at the region’s finest tables, it can also be found on the market under the Saumon de France label. The brand offers fresh and smoked salmon fillets and steaks direct from the production site. With the help of its success - some Parisian restaurateurs are crazy about it - it’s sometimes difficult to find, due to the seasonal nature of the fish: don’t hesitate to go directly to the store on the port. Last but not least, you can visit the aquaponics farm, which not only raises salmon but also grows vegetables, fruit, herbs and even delicious edible flowers!
