On the first floor of the Shangri-La Palace, you enter a classically decorated room that offers a view of the water and the immaculate Zayed Mosque through the bay windows. The service is precise and delicate, under French management. The chef's menu wanders around the terroirs of France: grilled lobster, tarragon choron sauce, Armorican-style scallops from the Bay of Bordeaux. It is a reminder of the essentials of good things, and a chance for balance. Bord Eau is a worthy (and unique in Abu Dhabi) purveyor of complex flavours.
