The old saltworks of Elounda, near the old town of Olous.
Close to the old town of Olous are the old saltworks of Elounda, which operated from the 15th century to the early 1970s. Built by the Venetians, in the 16th century they provided table salt for the Republic of Venice, which had just lost Cyprus (the main producer of salt) to the Turks. Once Crete was conquered (1669), the Turks continued to exploit the saltworks. Greece regained possession in 1929, and the local population continued to produce salt freely using artisanal methods.
