Philippe Gallon qualified as an oenologist in Toulouse in 2002, then went on to specialize with a Master's degree in "Vine and Wine in the Environment" in Bordeaux. In spring 2012, he opened La Cave des Beaux-Arts in the heart of Clermont-Ferrand, an original wine cellar with tasting rooms where he introduces you to the wines of France during his oenology classes. Philippe Gallon has made an enlightened selection of local vintages and organizes "wine walks" to discover Auvergne's winegrowing heritage. Join him in the vineyards and learn to recognize grape varieties, soil types and the link to the terroir. In the winegrowing village, discover the imprint of winegrowers from the Middle Ages to the present day, inscribed in the stone of Montpeyroux, Boudes and Neschers... Les petits crus offers a real experience around wines and cheeses. First, you choose the formula, either you test 4 or 6 pairings, then you choose your cheese board: mild, strong, creamy, or favorites. The wines arrive in small bottles, the cheeses on a slate. The tasting begins in a certain order. We are taken on a journey of flavors. No need to know anything about the products, everything is explained, we let ourselves be carried away, we discover, we appreciate and we even remember the names that have seduced our palate. An escape game around the wine is also organized for a new original oenological discovery.
