To discover all the stages of cassava flour production, stop by Mr. and Mrs. Ragal's cassava hut. The cassava is grated, peeled and pressed. The pulp is then spread out in large pans to make the famous cassaves, the manioc pancakes that have long been the basis of the slaves' diet. Sweet or savoury, they are then eaten while sipping a homemade liqueur or fresh fruit juice from the garden.
