This typically Creole snack offers bokits made from breadfruit flour with a very low gluten content. Bokit is one of Guadeloupe's most popular specialties. It's a fried bun with a variety of fillings, such as chicken, ham and cheese, but also in more local varieties: lambi, cod, Indian chicken with Bokaraïbes sauce (tandoori style)... Their bokits are light and low in fat, despite being fried, because breadfruit flour absorbs less oil. The flour is produced by a local flour mill.
