Fabrice Ariza and Nicolas Ciolfi have taken over the Maison des Chanoines in Saint-Chamond. The name of the establishment is a direct reference to the clandestine establishments of the American Prohibition era in the 1920s. The restaurant, beer and wine tasting bar and microbrewery produce a blonde, a white, an IPA and a few limited editions under the Blindcat brand.
