With more than twenty years of existence, this festival is always a precursor to the Christmas festivities in Nyons. Piquée olives are fresh black olives that are perforated after picking and then sprinkled with salt, which "makes them cry" to remove the bitterness. The olives then have a strong and pronounced taste. A market with PDO Nyons olive products, workshops, tastings around the olive and other local products animate this day.
