AU JARDIN D'HUILE
Pascale and Michel Monin dedicate 1,500 of their olive trees to the production of olive oil. The olive trees, which are of the Tanche variety, are cultivated using organic farming methods. For 10 years, the Monins have acquired their own mill which is used exclusively for the extraction of their PDO Nyons oil. It is a continuous chain mill, which guarantees a maximum content of polyphenols. Pascale also makes table olives, olive paste, olive jam and tapenade (without anchovies). She organises afternoon visits to the olive grove and the mill.
