He brilliantly revisits classics, with signature dishes such as crispy calf's head in ravigote sauce or roast squab with blackcurrant berries. Creatively, he wows the palate with a waffle and pearly egg with summer truffle as a starter to a summer menu, and the roast duckling with apricots that follows is a sweet confit, to make the transition to a platter of cheeses from local producers. Delphine, his wife, welcomes you and makes the experience a pleasant one.
