Three-star chef Arnaud Donckele loves to pay tribute to Saint-Tropez and Provence by magnifying local produce.
With his third star awarded by the Michelin guide in 2013 and kept for ten years, chef Arnaud Donckele continues to give his best. His credo is to pay homage to Saint-Tropez, to Provence, with numerous dishes designed to highlight the sea and the work of fishermen, the land and local quality products, vegetables from Cogolin, olive oil from Gassin, saffron from La Môle, cheeses from Collobrières, tomme from Châteaudouble. Car dans ce restaurant de très grande qualité installé dans un cadre paradisiaque tout est parfait. De l'accueil efficace et charmant au service rapide et profondément stylé, les agapes vont se dérouler sans fausse note. Rare pour être souligné.
Invité par ma consœur journaliste du quotidien régional, elle m'avait fait l'éloge de la cuisine et de son chef. Elle voulait avoir l'avis d'un critique : elle était au dessous de la réalité.
Il y a un souci du détail pour la présentation de chaque met. C'est une cuisine inventive, délicieuse, raffinée qu'il faut découvrir absolument. Tout est frais et préparé avec des produits du terroir entre terre et mer.
