The speciality of this Marseilles house is, as its name suggests, boutargue! Native to Provence, boutargue is made from the eggs of a particular species of fish, the muge, salted and dried eggs which are then preserved under a layer of paraffin. This exceptional product made by craftsmen can be eaten for example on toast as an aperitif or in risotto or pasta dishes. It is particularly found in Jewish culture, and the Meyer company makes special boutargues for Hanukkah! To be savoured!
