Produce wine in the city centre of Marseille? Fabienne and Lukas Völlmy did it! This French woman married to an American-Switzerland has passion for wine and has a chemistry license and a national diploma of wine… What to do wonders! Their «micro-vintages» (a few hundred litres) come from plots of individual vines based in Provence, Vaucluse and Var. To do this, they use both the most modern oenological techniques and ancestral know-how, with a preference for old vines and organic grapes: harvesting and sorting grain-per manual grain, pressed at foot… The vinification process and the sale take place in their Marseille winery, which is a factory shop full of mystery. Harmful of normal physical treatments (thermovinification, sterile filtration, etc.), wine is fully expressed. Wines that are both delicate and well-affirmed, be they red, white or rosé. The Grenache grape predominates (Anti-matter, Gargantua, Cargo), but Syrah (organic) and Roussanne (organic) are also present. There is nothing more than to taste…
