Every year, on the first weekend of December, Baux-de-Provence christens the new oil, fresh from the presses.

For over thirty years, the first weekend of December, takes place the baptism of the new oil, just out of the presses. Each year, the event moves to the partner mills. The ceremony begins with the arrival of the new olive oil, collected from mill to mill. Once the oil is blessed, the induction of personalities into the order of "New Oil" begins. A large oil market animates the weekend with many animations.
