Chantal de Lander-Gaubens is the master of this family estate. The orchard has thousand-year-old olive trees. She works with the oil mill in Coudoux, which uses traditional methods of production. In order not to alter its qualities, the oil that rises to the surface of the settling tank is collected by the "leaf". This equipment produces four types of oil, all fruité noir, from aglandau and salonenque olives. The over-ripening and the know-how of the miller give them particular flavours. Delicious!
