In this fully restored 19th-century farmhouse, chef René Bergès concocts refined, inventive cuisine with a Mediterranean flair. His cuisine evolves with the seasons, always respecting local produce. Local products, needless to say. From poached eggs with truffle cream as Mamie Gabrielle liked them, or pork mignon with apple fruit stuffed with calvados black pudding, to Chantal Louis's dessert, everything is perfect, as is the contemporary, light-filled setting.
