This Aix institution was recently taken over by a young chef, Thomas Roret, with Julien in charge of the dining room: the restaurant is set in vaulted rooms dating back to 1495, with a troglodyte feel and a Zen, modern atmosphere that invites you to relax. You'll be amazed by the flavorsome cuisine, based on fresh market produce and inventiveness. A single 5-course menu "en terre aixoise" with wine pairings, mise en bouche and dessert, 3 courses and 3 desserts to choose from. Beautiful and delicious, with very attentive service.
