Here, he seeks to reinterpret Mediterranean cuisine in a contemporary version where fresh products are sublimated through short cooking times and full-bodied juices. Ogram also evokes this precision of cooking to enhance the taste of food as much as possible. Mastering homemade meats and foie gras to perfection, he is a master in the art of the Rossini style beef fillet, which regularly appears among the suggestions.
