Developed in collaboration with Pierre Gagnaire, the new Fouquet's menu revisits the essentials of French brasserie cuisine. For example, you will find the legendary Merlan Colbert, or a heart of beef fillet with black pepper flambéed in front of the gourmands with cognac and Champs-Élysées sauce.
