For three decades, the Roux family has run the Ane Vert farm, which now has 950 goats and 120 sows. Over the years, they have specialized in the artisanal production of raw-milk goat cheeses. There are many variations: chabichou du Poitou (the star!), chabis, faisselle, bûchette, pyramide... all with the same savoir-faire and taste. The cheeses are sold direct from the family farm, or in short distribution circuits via producers' stores and supermarkets.
