Here, Claire Halleux makes maroilles fermier in the purest tradition: the raw milk used is that of the cows that graze peacefully around the farm, the cheese is prepared on the spot, then matured in the vaulted cellar with brick walls hidden under one of the buildings. Its maroilles "Mignon" was awarded the Silver Medal at the Concours Général Agricole in 2019: a guarantee of quality.
