Who said that greedy was a bad defect? On the contrary, it is a quality that promises endless discoveries. And the Little Futé does not end up singing his praises through his editions. Are certain specialties - often sweet - forever associated with the commune of which they are the herald? This is the case with Cambrai stuffing or Aix calissons. In Angers, it is the rocks that serve to build the city which are inspiring for the confectioners. Since the 1960 s, a small square of caramelized nougatin with almonds wrapped with blue chocolate, the Quernon d 'Ardoise, evokes shale (now in macarons), while Tuff' line pays tribute to the tuffwater: soft powder immersed in its fine sheet of white chocolate a paste of fruit with raspberry (at Laurent Petit, rue Saint-Aubin). More than centenary, the Giffard house continues its liquorous history, started with the pastille mint (in Avrillé). Air, on its red fruit bed, creates Anjou at the moment of dessert on the most beautiful tables in the city. Unless you opt for the plum pâté, which draws from the orchard of France these Reines-Claude which adorn a beautiful golden crust (see among other things at the pastissier Allard at the Pont-de-Cé and place du Ralliement in Angers). For lovers of saline, it is the gully, the spoils and mushrooms of Saumur, which has recently been designated «culinary specialty of Anjou». In the heart of the gardens and vineyards that enrich the kings tables, the city offers many pleasures to gourmets. In summer, do not miss to taste fish and eels in guinguettes. Beyond these "solid" considerations, all these gourmets have a more liquid marriage with the immense wine-growing area, since the Anjou alone has more than 30 AOC wines in Loire wines, not counting its wines from France ever more appreciated by organic winemakers. They are nearly 1,800, spread over Maine-et-Loire. Notice to the greedy, so!
